
Our Mesquite GrillIn 1987 The Sawtooth Club became the first restaurant in Idaho to utilize live-fire wood cooking. We do not use processed charcoal or wood chips, only authentic mesquite logs from Texas. This method of natural wood cooking generates the intense heat that sears in the flavorful juices and imparts a variety of subtle tastes and aromas to meats, poultry, seafood, and game. We go to a lot of extra effort to grill over a live mesquite fire, but we think it's worth it.
Time after time in blind taste tests against food cooked over a conventional gas grill, our mesquite-grilled items are always unanimously preferred.
